Slum Gullion (We LIKE!)

 I have often doubled this recipe and made it on a Saturday so I can just re-heat it for a quick Sunday noon meal.  (When doubling this recipe, I can use the larger can of tomatoes and a larger 15-16 oz. can of tomato sauce, too.)   We like this with garlic bread and a salad.

Ingredient list and directions:
1-2 lb. lean ground meat (1 lb. works okay)
1 lge. onion, diced
2 tablespoons olive oil with dab of butter

1 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 of 15-16 oz. can stewed OR whole tomatoes
1 (8 oz.) can tomato sauce
1 and 1/2 c. uncooked macaroni
2 cups water
1 tsp. salt
1/4 tsp. pepper
Parmesan cheese

In a large skillet or Dutch oven that has a tight fitting lid, using medium heat, add oil and then brown onion for about 3 minutes minutes; add bell pepper(s) and cook another minute.  Add ground beef and with a spoon stir and breaking up into small bits; cook until meat is well done.  If there's a lot of visible fat, drain.
 
Add tomatoes, tomato sauce, water, cooked macaroni, salt and pepper.  Cover with tightly fitting lid and put into 325-degree oven for about 30 minutes, stirring every 15 minutes. Remove from the oven after 30 minutes and let sit with cover on for another 30 minutes before serving as this helps to blend all the flavors.  Sprinkle with grated Parmesan cheese or sharp cheddar cheese.

  1. Having found your blog, is like winning the lottery! Was just browsing through your casserole recipes and on my! They all look so tasty, and like the 'stick to your ribs' kind my family really enjoy. As if that was not enough, most are made from what is in my pantry.

    1. Gracie, you are a sweetheart! Thank you for looking through my recipe blog. I'm happy you also like recipes that don't require a special trip to the store-- sometimes, "special purchases" cause us to end up having ingredients left over that are never again used. As farmers, we just wanted something easy/quick to put together-- something that would hold us until the next meal. This particular recipe has been enjoyed by many others who've been with us through the years. Again, thank you! Doris

  2. Hello Doris, Last night baked Slum Gullion. Oh my goodness! Not only did we all thoroughly enjoy it, our lil dachshund (who thinks she's human, so must eat as we do...though did remove the onions from her serving) would have given it a 4 paws up, if only she could. Only regret I have, is that did not make a double recipe.
    From a 3 lb. roll of hamburger, the previous nite we had burgers with the trimmings, so saved the excess burger for your casserole the next night. For 3 lbs. of burger to make dinners for 2 nights is totally unheard of. Thanks to you, that is no longer the case. Many thanks for a wonderful casserole, it definitely is a long-term keeper!     1. I LIKE making meat go further-- I always use less than what a recipe originally calls for, and can't tell the difference. I take meat as the complimentary flavor and it works. Glad you were happy with this. Thanks, again.
